I have no idea what else is out there, but Sonnenschein once mentioned the following paper to me: An Axiomatic Characterization of the Price Mechanism Hugo Sonnenschein Econometrica, Vol. 42, No. 3. (May, 1974), pp. 425-434. As of three years ago, I think that he was unaware of any other category-theoretic economics papers. - Cameron
